My Other Kitchen uses only lean cuts of pork: center cut pork chops and pork tenderloins--they are also very fresh and tender! To cook our pork chops just right: 1. Choose a 12 inch skillet for 4 chops. 2. Use a combo of oil & butter: butter helps browning and a little oil in with the butter increases it's smoking point so you will get great flavor without burning. Warm this butter/oil mixture over medium heat until it turns golden brown. You will want to hear a solid sizzle when the food hits the pan. 3. Set the timer for 3 minutes and leave the food alone. Resist the urge to turn the chops before you hear the "ding". Turn once! At the end you will have a juicy, flavorful chop. Enjoy!
